This easy and useful Egg Capsicum Salad recipe shows you how to make scrumptious Paleo friendly foods every day of the week.
Ingredients:
2 boiled eggs, diced
2 bacon eyes, diced
1 tbs oil
½ green capsicum, diced
¼ cup parsley, chopped
1 tbs mayonnaise
1 cup mixed salad leaves
Instructions:
Put oil plus bacon into a frying pan on average temperature and cook until bacon has started to crisp.
Take out the extra oil and put bacon into a mixing bowl alongside boiled eggs, capsicum, parsley and mayonnaise.
Blend well.
To serve up, lay salad leaves on top of a plate then top with egg and capsicum combination.
