Ingredients:
12 cups large chunks of peeled potatoes
10 slices bacon
4 large onions, sliced
2 teaspoons salt
Directions:
Put potatoes in big pot. Fill the pot with water until it is above the top of the potatoes. Add salt to the water and stir to dissolve the salt. Boil the water and cook the potatoes until they become tender, it will take about 20 to 25 minutes. Drain the potatoes when tender and set aside to cool.
Place bacon in a large, electric griddle. Cook over medium high heat until they become brown. Remove the bacon from griddle, and when it gets cool crumble it. Don’t remove the bacon fat from the griddle and return to stove.
Add onion, potato chunks, and bacon to flat griddle. Cook for about 30 minutes over medium high until potatoes become brown and onions are translucent.
